White Chocolate Blueberry Protein Bars

If you love creamy white chocolate paired with juicy blueberries and coconut, these White Chocolate Blueberry Protein Bars are about to become your new favourite healthy snack. They are soft, lightly chewy, naturally sweetened, and protein-rich – making them perfect for busy days when you want something nourishing that still feels like a treat.

The flavour combination is both fresh and indulgent. Blueberries add a natural sweetness and antioxidant boost, while coconut brings subtle creaminess and healthy fats that help keep you satisfied. White chocolate ties everything together, adding richness without overpowering the bar. The result is a balanced, dessert-style snack that supports steady energy and curbs cravings.

These bars are ideal for meal prep. Because they are completely no-bake, they come together in a food processor and set in the fridge. Once sliced, and drizzled with melted white chocolate they are easy to grab on the go – perfect for post-workout fuel, afternoon snacking, or a healthier dessert option. Unlike many packaged protein bars, these are made with real ingredients you can recognise and trust.

Protein powder and nut butter provide lasting fullness and help support muscle recovery, while oats and coconut add fibre and texture. Fresh or frozen blueberries create natural moisture and flavour, allowing you to keep added sweeteners to a minimum. For best results, choose a high-quality white chocolate with minimal added sugar or a sugar-free option if preferred.

These White Chocolate Blueberry Protein Bars are also highly customisable. You can add chia seeds for extra fibre, swap almond butter for cashew butter, or drizzle additional white chocolate on top for a more decadent finish. They are naturally gluten-free and can be adapted to dairy-free with simple swaps.

If you are looking for a protein-rich snack that feels indulgent without compromising your health goals, these bars strike the perfect balance. ✨

Ingredients

Bar Base

  • 1 cup rolled oats
  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup vanilla protein powder
  • 1/2 cup desiccated coconut
  • 1/2 cup white chocolate chips, melted
  • 1/3 cup almond or cashew butter
  • 1/4 cup coconut milk or almond milk
  • 1 teaspoon vanilla extract

White Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Place all base bar ingredients in a food processor and process until mixture becomes a sticky dough.
Be careful not to over process as its nice to have texture variance and different sized “bits” in your protein bars.
Press mixture firmly into the prepared tin, smoothing the top.
Place in the fridge for a couple of hours to firm up then carefully remove from the tin and cut into 8-10 bars.

White Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Once melted drizzle over the bars using a spoon or cut the corner off a Ziplock bag and pipe the white chocolate for a more professional finish.
Refrigerate for at least 1- 2 hours until set.
Store in fridge for up to 1 week or freezer for up to 3 months.
