White Chocolate Blueberry Protein Bars

These blueberry protein bars with oats, vanilla protein powder, white chocolate and fresh blueberries make the perfect healthy snack pre or post-workout. Naturally sweetened with dates and topped with white chocolate drizzle, with no baking required! ๐Ÿค ๐Ÿ‡

Ingredients

Bar Base

  • 1 cup rolled oats
  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup vanilla protein powder
  • 1/2 cup desiccated coconut
  • 1/2 cup white chocolate chips, melted
  • 1/3 cup almond or cashew butter
  • 1/4 cup coconut milk or almond milk
  • 1 teaspoon vanilla extract

White Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place all base bar ingredients in a food processor and process until mixture becomes a sticky dough.
    Be careful not to over process as its nice to have texture variance and different sized โ€œbitsโ€ in your protein bars.
    Press mixture firmly into the prepared tin, smoothing the top.
    Place in the fridge for a couple of hours to firm up then carefully remove from the tin and cut into 8-10 bars. ย 

White Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted drizzle over the bars using a spoon or cut the corner off a Ziplock bag and pipe the white chocolate for a more professional finish.
    Refrigerate for at least 1- 2 hours until set.
    Store in fridge for up to 1 week or freezer for up to 3 months.
