White Choc Raspberry Overnight Oats

White chocolate raspberry overnight oats are the breakfast you didn’t know you needed! Made with oats, chia seeds, almond milk, protein powder and raspberries and topped with a layer of yogurt and white chocolate for the ultimate breakfast experience.

This recipe is a fun twist on any good old breakfast oatmeal. It combines raspberries and white chocolate which in my opinion are the tastiest thing ever!
You can make these ahead of time as a breakfast meal prep for the week. Simply double or triple the recipe.
Are overnight oats healthy?
I always like to mention that health/healthy depends on your description of it. Are these oats low-calorie? Not specifically. But do they pack a punch of nutrients? Yes, absolutely.
Fortunately we are well past the era where food is judged on how many calories it has or doesn’t have. Now its all about nutrients and a balance of protein, healthy carbs and fats. Its about packing your life with the good stuff rather than trying to fit your food through the eye of a needle.

Ingredients

  • 1/4 cup rolled oats
  • 2 tablespoons chia seeds
  • 1/4-1/2 cup almond milk (or milk of choice)
  • 1/4 cup Greek yogurt plain
  • 1 scoop protein or collagen powder (vanilla or plain is good)
  • 1/4 cup raspberries, smashed

White Chocolate Yogurt Topping

  • 1 tablespoon white chocolate chips
  • 1/2 teaspoon coconut oil to thin out the chocolate

Toppings

  • Whipped coconut cream - recipe below in notes
  • Fresh raspberries

Instructions

  • Combine oats, chia seeds and almond milk.
    Stir very well to make sure the chia seeds are mixed in and not clumping!
    Refrigerate for 10 minutes.
    Once thickened, stir in the smashed raspberries.

White Chocolate Yogurt Topping

  • Place chocolate chips and coconut oil in a small dish and microwave at 50% power with 10 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Mix the yogurt with the protein powder and melted white chocolate and spread on top of the oat/chia raspberry mixture.
    Top with whipped coconut cream (recipe below in notes) and fresh raspberries. Cover and store in the fridge overnight.
    Enjoy cold or heat in the microwave.
