The best part is that it is nutritious and made with real food ingredients. All you need to make this recipe is a food processor, some frozen fruit and you are good to go.

Its a yummy ice cream made with frozen fruit (usually bananas) base and other add-ins!  You simply blitz pieces of frozen fruit in a food processor or high-speed blender and the end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion yet light and easy enough for an any time indulgence.

It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently.

It sounds too good to be true doesn’t it? Ice-cream just out of bananas – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right.

I don’t know why it’s taken me this long to put up this recipe, because this is something I have been making regularly for the last decade at least, if not longer! I have been making a version of this soft serve for years now. It’s the world’s simplest recipe, but it’s out-of-this-world delicious.

I’m a huge dessert lover, but I don’t always love how it makes me feel. A blood sugar crash, a stomach ache, and a headache are just a few side effects I’ve felt from overindulgent sugar-laden desserts.

Still, I don’t want my healthy dessert to taste healthy, you know? I still want a little sweetness and satisfaction. Luckily, we have got this healthy nice cream for that!

Ingredients

  • 1 cup banana, slices, frozen
  • 1 cup pineapple, chunks, frozen
  • 1/2 cup vanilla or plain protein or collagen powder
  • 1 teaspoon vanilla extract
  • 1/2 cup extra of fresh or canned pineapple pieces, chopped to fold through

Toppings Optional

  • Whipped coconut cream – recipe below in notes
  • Toasted coconut flakes
  • White chocolate chips
  • Fresh fruit or berries

Instructions

  • Place the frozen bananas and frozen pineapple in the food processor and blend on high speed until it becomes creamy. You may need to scrape down the sides of the bowl a couple of times. It will take a few minutes, so be patient!
    Fold through the fresh or canned pineapple pieces for extra flavour and texture.
    Top your nice cream with whipped coconut cream (recipebelow in notes) toasted coconut or any other toppings you desire!
    Notes:
    This is best eaten right after making it, but it can be frozen for up to two months. I find that when you freeze nice cream, it gets very hard, because it’s made entirely of fruit. If you freeze the leftovers, you will need to let them thaw for a bit before enjoying.
