Vanilla Coconut Protein Nice Cream

This homemade vanilla ice cream recipe is an absolute classic and deserves a spot in your freezer all year long. It’s rich, creamy, and is packed with vanilla and coconut flavor; perfect for serving alongside your favorite desserts or enjoying on its own in a bowl with your favorite toppings.

While you can certainly grab ice cream from the grocery store, store-bought ice cream can’t hold a stick to the creamy deliciousness of homemade vanilla coconut nice cream. The simple list of just 4 ingredients allows the natural flavors to shine through; no unnecessary extra ingredients!

If you haven’t already heard of nice cream, today I would like to introduce you to it. A yummy ice cream made with frozen fruit (usually bananas) base and other add-ins! Its my favorite healthy ice cream because it’s quick and easy to prepare, with only one main ingredient required.

You simply blitz pieces of frozen fruit in a food processor or high-speed blender and the end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion (birthday party, anyone?) yet light and easy enough for an any time indulgence.

It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently. You don’t need one of those special ice cream churning machines, you simply use frozen bananas, a splash of milk and some flavourings – that’s it!

It sounds too good to be true doesn’t it? Ice-cream just out of bananas – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right.

It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl.

You can satisfy an ice cream craving guilt-free with this “nice cream“! Seems so simple, that it feels like you are cheating a bit… but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!

You can eat the nice cream straight out of the blender if you like the soft-serve texture. For a firmer texture, spoon the mixture into a dish and set it in the freezer for about 30 minutes until it firms up. Then just scoop, add your toppings, serve, and enjoy!

Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than any mass manufactured ice cream and the plus point is, it is absolutely healthy!  Full of nutrition and fruits, here is another way of eating more good stuff.

Vanilla Coconut Protein Nice Cream

If you are looking for a healthy treat, then this is the perfect recipe for you! If you haven’t given the frozen banana “ice cream” thing a try yet, I encourage you to do it soon, preferably with this decadent and delicious vanilla coconut protein nice cream.

Ingredients

  • 4 bananas, sliced, frozen
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/4 cup protein or collagen peptides powder
  • 2 teaspoons vanilla extract

Toppings Optional

  • Sprinkles
  • Chopped nuts
  • Fresh fruit or berries
  • Coconut shreds

Instructions

  • Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making this nice cream to allow coconut cream to separate.
    When ready to make the nice cream, open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Thaw frozen bananas slightly so the blender can grab onto them making it easier and quicker to blend.
    There is a couple of options here: Microwave them for 20 seconds at a time, checking to see if you can dent them with a knife.
    Or, let them sit on the counter until still frozen but not rock hard.
    Once slightly softened, add the bananas into a blender followed by the  hardened coconut cream, protein powder and vanilla extract.
    Start blending on its lowest speed, then quickly increase to the highest speed, using the tamper to press ingredients toward the blades. Blend for 30 to 45 seconds or until smooth and creamy.
    You can eat the nice cream straight out of the blender if you like the soft-serve texture. Fora firmer texture, spoon the mixture into a small pan and freeze for about 30 minutes until it firms up. Then just scoop, add your toppings, serve, and enjoy!
