Instructions
Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making this nice cream to allow coconut cream to separate. When ready to make the nice cream, open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.Thaw frozen bananas slightly so the blender can grab onto them making it easier and quicker to blend. There is a couple of options here: Microwave them for 20 seconds at a time, checking to see if you can dent them with a knife. Or, let them sit on the counter until still frozen but not rock hard. Once slightly softened, add the bananas into a blender followed by the hardened coconut cream, protein powder and vanilla extract.Start blending on its lowest speed, then quickly increase to the highest speed, using the tamper to press ingredients toward the blades. Blend for 30 to 45 seconds or until smooth and creamy. You can eat the nice cream straight out of the blender if you like the soft-serve texture. Fora firmer texture, spoon the mixture into a small pan and freeze for about 30 minutes until it firms up. Then just scoop, add your toppings, serve, and enjoy!
