Vanilla Almond Protein Pudding For One
Ingredients
- 1/2 cup thick Greek-style yogurt
- 1/2 cup almond (or any) milk
- 1 scoop protein or collagen peptides powder, plain or vanilla
- 1 tablespoon almond (or any other nut or seed) butter
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
Toppings Optional
- Dollop of whipped coconut cream – recipe below in notes
- Fresh or freeze-dried fruit or berries
- Chopped nuts
- Chocolate chips
Instructions
- In a blender or food processor, combine yogurt, milk, protein powder, almond butter, honey and vanilla. Blend on high until the mixture is silky and completely smooth.Spoon out into a small serving bowl or jar.Chill for 30 minutes if you would like it extra thick and cold.Top with your chosen toppings just before serving.
