Tahini Coconut Freezer Fudge

The consistency, texture, flavor, the balance of salty/sweet/tahini/chocolate – the whole deal. It works!  These simple fudge is a breeze to make and is totally suitable for snacking but still delicious enough for dessert. I love the toasty tahini flavor, the familiar vanilla, and the creamy coconut.

Ingredients

  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 cup chocolate chips
  • 1/2 cup tahini (sesame seed butter), well stirred
  • 1/4 cup coconut oil
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Sprinkle of sea salt to top the fudge 

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.
    Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Open chilled can and scoop out the cream that has separated and set hardon the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    In a medium sized saucepan place coconut cream, tahini, coconut oil, and honey and over a very low heat melt these ingredients. Keep stirring until melted and well combined. Remove from heat and add chocolate chips and stir until melted.
    Lastly add vanilla extract and stir again.
    Scoop out mixture into the lined baking dish and using a spatula or backof a spoon spread out evenly. Sprinkle a pinch of sea salt over the top to getthe best flavor!
    Cover with plastic wrap and let it set in the freezer until solid - about 2 hours. Cut into 20 or more squares.
    Serve frozen, or place the fudge squares in an airtight container in the freezer.
