Back in 2017, I hit a point where I just couldn’t drink another protein shake, but I still needed an easy way to get more protein into my day. That’s when I created this raspberry protein parfait – it’s thick, creamy and way more satisfying than the chocolate bar I used to grab for a snack.
One night when I was craving chocolate – like, rich, Nutella-style chocolate – but didn’t want to wreck my clean streak, this gorgeous pudding came out of my blender and I couldn’t believe how delish it was. It’s creamy, indulgent, and protein-rich enough to count as post-workout fuel.
I find parfaits super fun to make and enjoy since I love mixing various layers with different textures and flavors. There’s something so fun about digging into all the layers with a spoon and savoring the explosion of flavors in your mouth!

Superfood Chocolate Raspberry Protein Parfait
Ingredients
Chia Pudding
- 4 tablespoons chia seeds
- 1 cup coconut milk
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
Raspberry Purée
- 1/2 cup raspberries, fresh or frozen
- 1 tablespoon water
- 1-2 teaspoons honey or maple syrup
Superfood Chocolate Mousse
- 2 avocados
- 2 scoops protein or collagen peptides powder
- 2 tablespoons cocoa powder
- 2 tablespoons honey or maple syrup
- 1/2 cup coconut milk
Toppings Optional
- Fresh fruit or berries
- Chopped nuts
- Seeds like hemp or chia
- Coconut flakes
Instructions
- Chia Pudding Mix all chia pudding ingredients in a small bowl. Let the pudding sit for at least 10 minutes, stirring in between, until it thickens. Make sure to break up any clumps to get a uniform consistency. You can prepare the pudding night before and let it chill in the fridge to thicken even more.Raspberry PuréeAdd raspberries to a small pot with water over low heat and stir until soft and warm for 5-10 minutes. Mix in the honey and set aside to coolChocolate MousseSmash the avocado with a fork and add the rest of mousse ingredients. Alternatively, you can blend everything using a regular or hand-held blender. Mix until smooth. Store in the fridge if not serving immediatelyAssemble: Divide chia pudding into two portions and serve topped with the raspberry purée, chocolate mousse, and desired toppings.Chill for best results.
