When your sweet tooth strikes, this Strawberry Walnut Yogurt Bark is going to be your best friend. No joke. Whether it’s a midnight snack sesh or a midday treat, this bark is the perfect way to satisfy your sugar craving without all the guilt. Plus it’s so dang easy to make! The hardest part of this recipe is waiting for the yogurt bark to freeze up so you can eat it. 🙂
Strawberry Bark is a recipe ‘sensation’ that has been circulating the internet for some time now. If there’s one trend I can get behind, it’s this viral Strawberry Bark. As soon as I saw this trend pop up, I had to make it. I mean, how cute are these?!
It’s the most fun twist on chocolate covered strawberries. And we already know how I feel about any sweet treat that involves a strawberry, chocolate-peanut butter combo. Making this was truly a no-brainer.
Its a triple threat kinda treat: so easy, so delish, and so pretty. There is minimal ingredients involved. So ideal! I’d argue it can also be enjoyed as a snack, not just a dessert. Who’s with me?
Strawberries are packed with vitamin C and antioxidants, which are naturally detoxifying and a great way to support your digestive system. And of course, vitamin C can be helpful in boosting your immune system, but did you know it’s great for your skin and can also boost collagen production? Might have to categorize this one as a superfood sweet treat!
I know the combination of peanut butter, chocolate, and strawberries sounds kind of strange, but it somehow just works well; it’s kind of like eating a chocolate peanut butter and strawberry jelly sandwich without the bread and a nice change from the frozen yogurt bark with berries.
Berries, chocolate, and peanut butter are a trio you must try. Perfect sweet and salty treat for parties, pot lucks, dessert platters or family gatherings. Or just an any time snack!
Good old peanut butter provides the best nut-buttery flavor and is a good source of healthy fats and protein. PB also contains a small amount of fiber and essential vitamins and minerals, such as magnesium, potassium, and zinc.
To add a healthy crunch you could top your bark with iron and magnesium-rich cacao nibs, crushed peanuts, plus some flaky sea salt. This is the most perfect little fruity dessert, sweet and salty frozen treat that tastes just as delicious as described on the internet.
It is super easy to whip up and store in the freezer for a high protein healthy dessert or snack that will satisfy your chocolate peanut butter cravings.
It’s high in protein. Greek yogurt is really good for you. It’s rich in important nutrients like protein and calcium, and adding a source of protein to our sweet snacks can help to slow the rise in our blood sugars, keeping levels stabilized and helping us feel fuller for longer. Regular yogurt also has protein in it, but Greek yogurt contains more.
For best results, freeze the yogurt bark for a minimum of 4 hours until it hardens, before diving in!
Strawberry-Walnut Protein Yogurt Bark
Ingredients
- 2 cups Greek-style, thick yogurt
- 1 cup strawberries, roughly chopped
- 1/2 cup walnuts, chopped
- 1/4 cup peanut (or any other nut or seed) butter
- 2 scoops protein or collagen powder
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Chocolate Drizzle
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line a baking sheet with parchment paper or use a silicon baking mat.Mix yogurt, peanut butter, protein powder, honey and vanilla extract together in a medium sized bowl until well combined. Add chopped strawberries and walnuts and mix in.Pour your mixture onto the parchment paper and spread evenly into a 7-8-inch square or oblong shape around ¼-1/2-inches thick.Freeze for 1-2 hours.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle melted chocolate over the bark.Freeze for 2-4 hours. Cut or break in pieces, serve frozen.Store in zip-lock bags or airtight container in the freezer for up to 3 months.
