Ingredients

  • 1/4 cup cottage cheese
  • 1/4 cup thick Greek-style yogurt
  • 1 cup strawberries, fresh or frozen and drained
  • 1 scoop protein or collagen peptides powder, plain or vanilla
  • 1 tablespoon cashew butter
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon vanilla extract

Toppings Optional

  • Fresh fruit or berries
  • Chocolate chips or shavings
  • Dollop of whipped coconut cream – recipe below in notes
  • Freeze dried strawberries, crumbled

Instructions

  • In a blender or food processor, combine cottage cheese, yogurt, strawberries, protein powder, cashew butter, honey and vanilla.
    Blend on high until the mixture is silky and smooth.
    Spoon the mousse into a small serving bowl or jar.
    Chill for 30 minutes if you would like it extra thick and cold.
    Top with your chosen toppings just before serving.
