1/4cupthick Greek-style yogurt
1cupstrawberries, fresh or frozen and drained
1scoopprotein or collagen peptides powder, plain or vanilla
1tablespooncashew butter
1tablespoonhoney or maple syrup
1/4teaspoonvanilla extract
Toppings Optional
Fresh fruit or berries
Chocolate chips or shavings
Dollop of whipped coconut cream – recipe below in notes
Freeze dried strawberries, crumbled
Instructions
In a blender or food processor, combine cottage cheese, yogurt, strawberries, protein powder, cashew butter, honey and vanilla. Blend on high until the mixture is silky and smooth.Spoon the mousse into a small serving bowl or jar.Chill for 30 minutes if you would like it extra thick and cold.Top with your chosen toppings just before serving.
