After so many cheesecake recipes, baked or not baked, bars and cupcakes, it’s time for snack bites, bliss balls, energy balls, call them what you like. To me they are little spheres of snacking. Little orbs of awesomeness.
These yummy strawberry cheesecake protein bites are my go-to snack whenever I am looking for an instant boost of energy or even when I just want to treat myself and my loved ones with a sweet, delicious, dessert made healthy.
This recipe should be at the top of your dessert list. This foolproof confection recipe boasts a luscious filling of cream cheese and honey, perfectly balanced with strawberries and your favourite protein or collagen powder.
There’s just something about strawberry and cheesecake that unconsciously pulls my lips into a smile whenever I treat myself to a creamy sour-sweet bite. Tangy and delicious, these protein bites have a delightful combination of strawberry and cream cheese that will wake up all your sleeping taste buds.
They are easy to make and ready in no time and are packed with protein and fiber. They really do make the perfect bite-sized dessert.
This is one of those ‘bet you can’t eat just one’ kinda treats! That tangy, creamy, berry filling can be so addicting…
But these small but mighty bites are truly a minimum fuss dessert. They hit at only 8 ingredients! And the entire process goes like this: blend, shape, coat, chill, done!
The flavour and richness are wild. So, SO good. I have the bites all waiting in a container in the freezer, and I just set one (or two or three) out to thaw a bit while cleaning up after dinner. Perfect sweet relief at the end of a busy day.
I love a good yummy something and it’s become a tradition that I make something for the weekend, almost every weekend. It’s just a nice way to reward yourself I think, and keep the sugar-intake at a minimum.
After all, dessert eating has its limits – if we all could just succumb to our cravings, we would be sick, obese, diabetics and what not.
Basically, I’ve learned that sugar cravings are not all that cute – you just can’t have it all… and the more disciplined you become with your sweet tooth cravings – the healthier you are.
But, but wait! What if this said dessert is incredibly um… Good-for-you! Like for reals! No sugar added, healthy ingredients, amazing taste, completely guilt-free!? Do all my rules and all my discipline for craving sugar go out the window? Ha! They kind of do!!
Because these strawberry bites are crazy amazing you can feel good about eating one or two of them, even for breakfast and not feel one piece of guilt They are perfectly portioned and great for sharing and make an excellent treat to gift to friends, or serve as desserts.
Just trust me on this… this is a no-bake, raw recipe for a dessert so delicious I think you should just make a double batch and call it a day!
Strawberry Cheesecake Protein Bites
Ingredients
- 1 cup cream cheese, full-fat, softened to room temperature
- 1/2 cup almond or oat flour
- 1/4 cup honey or maple syrup
- 1/4 cup protein or collagen powder – unflavoured or vanilla
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- Mix the cream cheese, almond flour, honey, protein powder, coconut oil and vanilla extract together in a medium bowl until well combined.Next, chop your strawberries into small, bite sized pieces. If you want the strawberry bits to be chunkier, make the pieces bigger- if you want it all to blend together, chop them up nice and small. Add the strawberries to the mixture and gently fold them inWith a tablespoon or small ice cream scoop drop spoonfuls of the cheesecake mixture onto parchment paper. Shape each dollop with your hand into nice round balls. (if it’s too soft to work with, place the balls in the freezer for a while). You will get 10-12 balls (more or less) depending on your size preference. Place bites into the freezer for 1-2 hours or until firm and set.
Chocolate Coating
- Place chocolate chips and coconut oil in medium dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the bites from the freezer (just a few at a time) and skewer each bite and either dunk in the melted chocolate or use a fork to hold each bite and spoon over the melted chocolate letting the excess drip back into the dish then place back on the parchment lined tray. After dipping a few frozen balls in melted chocolate, the chocolate may thicken. so you may need to reheat it and thin it out with a bit more coconut oil.When finished the dipping process, transfer leftover melted chocolate into a zip lock bag, cut off the corner and drizzle over the bites.Note: The bites must be completely sealed with chocolate. If you missed some spots you can add few drops of melted chocolate with a spoon to cover the missed bits.Place bites back into the freezer for 1-2 hours.Store up to 1 week in fridge or up to 3 months in freezer. If frozen, remove from freezer for 10 minutes before eating to allow them to soften.
