These no bake strawberry bars are filled with protein and are packed with healthy ingredients! They taste like a strawberry shortcake – minus the cake, and are perfect for when you need a quick grab and go snack!
The recipe requires minimal prep time and all you need is a mixing bowl, spatula, parchment paper, and a baking pan. Enjoy them as a healthy snack or on-the-go breakfast. I love to meal prep an extra batch to keep in my freezer for whenever a craving strikes.

Also perfect for lunch boxes and easy to make-ahead: You can make a big batch and keep them chilled or even frozen until you are ready to eat. What’s not to like?
Feel free to use your favorite protein powder, and the recipe can easily be doubled or tripled if you want to make up a big batch for meal prep. Dress them up with some drizzled chocolate or coconut on top – and enjoy them as the perfect healthy treat.

Strawberry Cashew Protein Bars
Ingredients
- 2 cups cashews, soaked 3+ hours and drained
- 1 cup dates, soaked 30 minutes and drained
- 1 cup freeze dried strawberries
- 1/2 cup desiccated coconut
- 2 scoops strawberry protein or collagen powder
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
Chocolate Drizzle Topping
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon 8-bar mold.Add cashews to a food processor and process until broken down and crumbly. Add dates, coconut, protein powder, coconut oil and vanilla and continue to process until mixture comes together in a dough like form.Crush freeze dried strawberries and then gently fold them into the base mixture.Scoop out into the mold or baking pan and smooth out evenly with a spatula or back or a spoon.Sprinkle more freeze dried strawberries on topFreeze for 3-4 hours before cutting into 8 bars or ore smaller squares or pop out of mold.
Chocolate Drizzle Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, drizzle on the bars with a spoon. Store in fridge for up to 1 week or freezer for up to 3 months.
