Strawberry Cashew Protein Bars

These healthy no bake bars with freeze dried strawberries are filled with protein and are packed with healthy ingredients! They taste like a strawberry shortcake- minus the cake.

Ingredients

  • 2 cups cashews, soaked 3+ hours and drained
  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup freeze dried strawberries
  • 1/2 cup desiccated coconut
  • 2 scoops strawberry protein or collagen powder
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Chocolate Drizzle Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon 8-bar mold.
    Add cashews to a food processor and process until broken down and crumbly. Add dates, coconut, protein powder, coconut oil and vanilla and continue to process until mixture comes together in a dough like form.
    Crush freeze dried strawberries and then gently fold them into the base mixture.
    Scoop out into the mold or baking pan and smooth out evenly with a spatula or back or a spoon.
    Sprinkle more freeze dried strawberries on top
    Freeze for 3-4 hours before cutting into 8 bars or ore smaller squares or pop out of mold.

Chocolate Drizzle Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle on the bars with a spoon.
    Store in fridge for up to 1 week or freezer for up to 3 months.
