Strawberries & Cream Bliss Balls

These small but mighty snacks are fudgy, soft, and so yummy. They are the perfect energy bites before or after a workout or an afternoon pick me up.
They are quick to make with only a short ingredient list, but they look and taste so decadent. They have a creamy vanilla base studded with strawberry chunks, strawberry filling in the middle, and then the entire treat is dipped in white chocolate and sprinkled with freeze dried strawberries! Oh my! What a dreamy treat.
These gorgeous little bliss balls are healthy because they are full of wholesome ingredients. They have cashews, coconut, dates, fresh strawberries and dried strawberries. These ingredients are great sources of fibre, plant based protein, antioxidants, and vitamins. So this way you can most definitely have your cake and eat it too!
There are a few alternatives to making these bad boys. If you want a more special treat you can roll them in melted white chocolate or if you wish to skip the chocolate you can roll the bites in shredded coconut.
You know those snacks that are oh so addicting that you have a love/hate relationship with them? I knew you’d get me. That’s how I feel about these nut butter protein balls. First, of all, everyone loves them. From my family to me (obviously), we are all grabbing for them.
These delightful little balls are filled with nourishing good fats and protein, making them a great snack option. You will truly feel like you are eating dessert, except they are made with super simple healthy ingredients.
They are stuffed with strawberry chia jam - made with strawberries and chia seeds and takes less than 15 minutes to whip up. It's loaded with fiber and protein, but no added sugar! You can dollop it on so many other dishes, smoothies, oats, smoothie bowls and so on. Keep some in the fridge to elevate any sweet recipe to another level.

Ingredients

  • 1 1/2 cups cashews, soaked 3+hours and drained
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/4 cup cashew butter
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons freeze dried strawberries + extra for garnish
  • 1 teaspoon vanilla extract

Strawberry Chia Jam

  • 1 cup strawberries, frozen or fresh
  • 1 tablespoon chia seeds
  • 1/2 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup (to taste)

Chocolate Coating

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Garnish

  • Sprinkle of freeze dried strawberries

Instructions

  • Make the strawberry chia jam first so it can cool and thicken while you make the bliss balls.
    Add strawberries to a small saucepan over medium heat and cook until the berries start to breakdown and the mixture is bubbling. You can use the back of a spoon or potato masher to mash the berries and create your desired consistency.
    Stir in the chia seeds and lemon juice. Then taste, and add sweetener if desired. If your berries are sweet you might not need to add any sweetener at all.
    Remove mixture from heat and let cool the mixture cool and thicken, about 5 to 10 minutes.
    You can use right away or let cool completely before transferring to sealed container and placing in chia jam in your refrigerator. The jam will keep for up to 1 week.
     

Bliss Balls

  • Add all of the bliss balls ingredients to a food processor except for the strawberries. Mix until it's a smoothish thick texture. Then add the strawberries so some chunks remain intact.
    If the mixture is too warm and soft to work with, you can chill the mixture in the fridge until it's more firm. Form the mixture to 20 (more or less) round bliss balls. Press an indent into the ball and fill with strawberry chia jam. Cover the filling.
    Melt the chocolate
    Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Using 2 forks or a skewer, dip the bliss balls in the melted chocolate and place on a rack. Sprinkle freeze dried strawberries on the bliss balls.
    Place the bliss balls in the freezer to allow them to set.
    Keep any leftovers in an airtight container in the fridge or freezer.
