The perfect energy bites before or after a workout or an afternoon pick me up. Packed with protein and healthy fats that will energize you and keep you full!
You know those snacks that are of so addicting that you have a love/hate relationship with them? I knew you’d get me. That’s how I feel about these snickers inspired protein bites. First, of all, everyone loves them. From my family to me (obviously), we are all grabbing for them.
These delightful little energy balls are filled with nourishing good fats and protein, making them a great snack option. You will truly feel like you are eating dessert, except they are made with super simple, healthy ingredients.

So, if you have been looking for an easy, nutritious, homemade protein/energy bite then this is the ultimate one! This no-bake recipe is so easy to put together.
Adjustable, delicious. The great thing about energy balls is that you can really make them your own. If you can’t do peanut butter, try a different nut butter such as almond butter, cashew butter or tahini (sesame seed butter).

Ingredients

  • 1 cup oats, instant or quick
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup peanut (or any other nut) butter
  • 1/2 cup desiccated coconut
  • 2 scoops protein or collagen powder
  • 1 tablespoon cocoa powder
  • 1/2 cup salted peanuts, separated

Chocolate Coating

  • 1 cup chocolate chips
  • 2 tablespoons coconut oil
  • Flaky sea salt

Instructions

  • Place oats in a food processor and process until broken down into oat flour. Add dates, peanut butter, and honey and process for another 2-3 minutes or until a dough is formed scraping the sides of the food processor bowl down if necessary.
    Add 1/4 cup of the peanuts to the food processor and pulse the peanuts to break them up. Be careful not to over process as you want the texture to still be chunky with larger pieces of nuts in it to add texture variance and different sized “bits” in your protein bites.
    Using a 1 tablespoon scooper, scoop out dough into around 12 balls (or more smaller ones) then roll between your palms to form your balls. Set aside.
    Chop up the remaining peanuts into small pieces. Set aside.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once the chocolate is melted dip each ball into the melted chocolate so that half of the ball is coated in chocolate. Sprinkle the ball with crushed peanuts and sea salt. Repeat this process until all the balls are coated in chocolate.
    Set the balls on a plate and transfer them to the freezer for 20 minutes or until the chocolate has set.
    Store the balls in an airtight container or bag in the freezer for up to 3 months.
