I love a good freezer dessert and when these yogurt clusters popped off on the internet a few months ago I was all over them. And I have since made other versions similar to these with different fruit or berries.

I love raspberries and I love chocolate, so for me, these chocolate covered raspberries are the perfect combination! These are the protein-rich healthy dessert of your dreams. These clusters are super easy to make whole being both delicious and nutritious. Raspberries are high in fiber and the yogurt is high in probiotics so these are also super good for your gut.

Ingredients

Yogurt Bites

  • 1 cup thick Greek-style yogurt
  • 1 cup raspberries, fresh or frozen
  • 2 tablespoons cashew or almond butter
  • 1 scoop protein or collagen peptides powder, plain or vanilla
  • 1-2 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1-2 teaspoons matcha powder (optional)
  • 1 tablespoon coconut oil

Instructions

Yogurt Bites

  • Add the yogurt, honey, nut butter, protein powder and vanilla extract to a medium bowl. Mix well until thick and creamy, then fold in the berries.  Taste test and add more honey or vanilla if you think it needs it.
    Scoop the mixture (about 2 tablespoons each) onto a parchment paper lined baking sheet or large plate to form 6-8 clusters. Then place them in the freezer for at least 1-2 hours to allow them to firm up completely.
    When the clusters are frozen, melt the chocolate.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted add the matcha powder and stir in.
    Remove the frozen yogurt clusters from the freezer and quickly dip each one into the melted chocolate.
    Working quickly, using two forks, dip one bite at a time into the bowl of melted chocolate until it is fully coated. Lift the bite from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining bites.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Return to the baking sheet or plate. Place the chocolate covered clusters back in the freezer until the chocolate has hardened, before moving them to an air-tight container for long term storage.
    These need to be stored in the freezer, however I recommend letting them thaw at room temp for 5 minutes or so before enjoying for the creamiest consistency and to avoid that icy texture.
