Raspberry Frozen Yogurt Bites

Videos of viral frozen yogurt bites have been taking the internet by storm recently – and for good reason. They are an easy, quick, and nutritious treat.
I think most of us can get down with a lunch-dessert, you know, a little sweet treat after a meal. These are perfect for that. Frozen yogurt bites are low maintenance to make and pleasing to the eyes!
These small but mighty treats are truly the ultimate healthy any time snack. They are protein packed, no-bake and super easy to make (less than five minutes). They are tasty, refreshing, and super convenient to store in the freezer and pull out when you want a sweet treat. Your ice cream cravings will be satisfied!

These babies can be a little hard straight out of the freezer but if you let them sit for 10 minutes they become softer and easier to eat. You can even break popsicle sticks in half and pop one into each bite before freezing for easier eating.

Ingredients

  • 2 cups yogurt Greek, plain or vanilla
  • 1 cup raspberries, frozen
  • 1 lemon, juice and zest
  • 2 tablespoons honey or maple syrup

Instructions

  • Line 20-24 muffin cavities with liners or use silicone or other flexible muffin tins. Or you can use silicone snack or bar molds. The shape does not matter at all.
    Set aside.
    In a large bowl, whisk together the yogurt, honey, lemon juice and zest until smooth, then fold in the frozen raspberries.
    Spoon into the muffin cups and freeze until firm (two to four hours, or overnight). You can break popsicle sticks in half and pop one into each bite to make them easier to eat if you like.
    Or simple pour the mixture into a lined baking pan and slice into squares when frozen.
    To store, pop the frozen yogurt bites out of the muffin tin or cut into squares, then place in an airtight container and store in the freezer for up to one month.
    To serve, let stand at room temperature for 10-15 minutes before serving to soften.
