2cupsyogurt Greek, plain or vanilla
1cupraspberries, frozen
1scoopvanilla protein powder
1lemon, juice and zest
2tablespoonshoney or maple syrup
Instructions
Line 20-24 muffin cavities with liners or use silicone or other flexible muffin tins. Or you can use silicone snack or bar molds. The shape does not matter at all.Set aside.In a large bowl, whisk together the yogurt, protein powder, honey, lemon juice and zest until smooth, then fold in the frozen raspberries. Spoon into the muffin cups and freeze until firm (two to four hours, or overnight). You can break popsicle sticks in half and pop one into each bite to make them easier to eat if you like.Or simple pour the mixture into a lined baking pan and slice into squares when frozen.To store, pop the frozen yogurt bites out of the muffin tin or cut into squares, then place in an airtight container and store in the freezer for up to one month. To serve, let stand at room temperature for 10-15 minutes before serving to soften.
