Raspberry & Coconut Gummies

Gummies are the perfect snack for kids and adults alike and are a great alternative to sugar-laden lollies. Don’t let the colour fool you, these raspberry and coconut gummies are not only delicious but they are also are packed with goodness.
It’s a fact, most store-bought gummies contain refined sugars like glucose syrup, sugar, dextrose or artificial flavors and colors, which doesn’t make them the healthiest option.
Even though they claim to be fruit-flavored, there’s very little – if any at all – actual fruit in them. Gummy candies are filled with unhealthy ingredients with a list on the label that looks like this – sugar, sugar, corn syrup, sugar, red 40, blue 1, and yellow 5.
The good news is, homemade gummies can be made with real fruit and vegetables, protein-rich gelatin and no refined sugar! Great for picky eater children or adults that resist eating vegetables.  Cooked, pureed greens, carrot, pumpkin, broccoli and so on are perfect for making gummies. You can even use greens powder or blend up chia, hemp, flax seeds too and incorporate into a gummy.
As with the classic homemade fruit gummies, the sky is the limit when deciding what shape to make these vegetable gummies. You can use different fun shapes or gummy bear molds. If you don’t have any silicone molds, you simply pour the mixture into a pan and cut them into squares when they have firmed as with this recipe.
Loaded with nutrients and so much better for you than store-bought. A great option for an easy and healthy all-natural snack with protein and no artificial junk in them! Easy to make and fun to eat!
Why eat gelatin gummies?
Gelatin makes up almost one-third of all the protein in our bodies and not having enough affects our joints, our skin and our gastro system.
Gelatin is a colorless and tasteless protein made from hydrolyzed collagen, which means it is part of the broken-down collagen. It provides important amino acids which are the building blocks of protein.
Gelatin also has a ton of health benefits – supporting digestive and gut health, maintaining strong bones, helping with joint pain, strengthening tendons, improving skin health, and can even help improve sleep.
Gelatin when cooled, becomes a sticky adhesive like glue and gels together. Which is how we can make homemade gummies from it.
The biggest benefit of eating gelatin, in my opinion, is that it is a gut healer, which means better nutrient absorption (so greater nourishment) all round.  Also, if your gut is functioning well, then your nervous system is better supported too. Gelatin contains amino acids that helps to seal leaky gut and feeds the good bacteria in your intestinal tract.
The gelatinous quality is also great for our bodies because it helps build strong connective tissues and cartilage and gives parts of our bodies some elasticity.
It can also improve sleep, reduce inflammation, reduce sugar cravings and can help with joint pain, so it’s a pretty big superstar. Its list of benefits includes improving the condition of your skin, hair and nails.  In fact, it’s said to be better then botox (and erase wrinkles, stretch marks and cellulite). Yoo hoo to that one!
These raspberry and coconut gummies sit somewhere between dessert and snack, and are made in under 5 minutes they are the perfect quick, easy and healthy recipe. They are packed with gelatin and collagen, powerful amino acids for full body wellness.
Great for the whole family. Plus - kids just love them.
I’m a huge fan of gelatinous treats and no better flavour combo than raspberry and coconut. Now I’m not a particularly patient person, so when it comes to using teeny-tiny moulds….well, let’s just say it has to be a special occasion!
I much prefer the pour and set approach, which is how this little ‘Double Decker” combo arose. You simply pour the mixture into a dish or pan and add the second layer over the top. Then you let it all set and cut into cubes or squares.
That’s not to say you can’t get creative and use a cute little mould. You can also use patty pans or mini cupcakes as moulds. Whatever the shape you decide to make, this recipe is a delicious treat your whole family will love.
In these layered Raspberry and Coconut Gummies, there are a few hidden ingredients just to boost the nutrients. Trust me, they still taste amazing and no one will even notice!
These are also made to be firm (with more gelatin) so that they resemble more of a supermarket gummy than jelly and will hold up better in a lunch box.

Ingredients

Coconut Layer

  • 4 tablespoons gelatin
  • 1/2 cup water
  • 1 cup coconut milk
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract

Raspberry Layer

  • 4 tablespoons gelatin
  • 1/2 cup water
  • 1 cup raspberries, fresh or frozen
  • 1/2 cup spinach
  • 1 orange, juice
  • 1/4 cup water
  • 1 tablespoon honey or maple syrup

Instructions

Coconut Layer

  • Place the gelatin and water in a small bowl to bloom (5 minutes).
Meanwhile, add the coconut milk, vanilla and honey in a small pot. Heat over medium heat until warm.
Add the bloomed gelatin to the coconut milk mixture and whisk until dissolved. Taste test and add more honey or vanilla if you think it needs it.
Pour into the mould just half way and place in the freezer to set.

Raspberry Layer

  • Place the gelatin and water in a small bowl to bloom as above.
Place the raspberries, spinach, water and orange in a blender and blend until smooth. (Optional step: pass through a sieve to remove the little seeds - I don't bother with this).
Remove the moulds with the coconut layer from the freezer. Top with the raspberry mixture. Return to the freezer if you want set quickly (within 20 mins) or in the fridge to set for 1-2 hours.
Store in the fridge for up to 2 weeks.
