Protein Cake Pops

These protein cake pops taste just like cake, are coated in chocolate and make for a high protein, snack or sweet treat.
They are super easy to make and require very minimal ingredients so you can easily elevate your snack or treat game with these nutritious cake popes proving that healthy can also be delicious.
This recipe is so simple, and comes together quite effortlessly. I absolutely love them out of the freezer and crumbled into a chocolate smoothie for the most epic snack!
It’s shocking how good these are! These babies are the perfect healthy sweet treat as the protein content will leave you feeling full while also satisfying and helping to curb sugar cravings while still being healthy!
That’s really the trick with eating healthier, its not limiting or denying yourself yummy things, its about ADDING good stuff so you don’t crave the not-so-good, high sugar things that can wreck health.
Its about making sure you get all the good nutrients you need with some extra sweets snuck in. Doesn’t get any better than that.  😊

Ingredients

Protein Balls

  • 1 cup cashew butter
  • 1/2 cup chocolate or vanilla protein powder
  • 1/2 cup oats, instant or quick
  • 1 tablespoon cocoa or cacao powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Toppings

  • Sprinkles
  • Flaked salt
  • Popsicle sticks

Instructions

Protein Balls

  • Mix all of the protein pop ingredients until a thick mixture forms.
    Use an ice cream scoop or spoon to make tablespoon sized blobs on a parchment lined plate or tray. Makes 6-10 servings depending on your preferred size.
    Freeze for a few hours until firm and set.

Chocolate Coating

  • Before melting the chocolate, set up your cake stand (or box or Styrofoam) to hold the cake pops once you have coated them in the chocolate. Poke your holes ahead of time and make sure your cake pop sticks fit.
    Place chocolate chips and coconut oil in small dish and microwave on 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Dip a cake pop stick about ½ inch into the chocolate coating and then into the center of the cake ball about halfway (the chocolate will help ‘glue’ and anchor the cake pop stick).
    Holding the stick, dip the cake pop into the chocolate to coat.
    Another method is to hold the cake pop over the chocolate and spoon the chocolate over while rotating the cake pop.
    Then place on the cake stand to dry. Dip twice for extra coating if you like a thicker coating. Freeze for 1-3 minutes and then drizzle with more chocolate or sprinkles or toppings of your choice while still wet.
     Place back in the freezer for 15 minutes to firm up completely.
