Around 4 p.m. every day, I remember that dinner is still a few hours away, and I’m already hungry enough to eat anything I can find. Packaged snacks can fill the void, but they often leave me unsatisfied, so I’m always looking for homemade snack ideas that are as delicious to fill this gap as they are easy to make.

These frozen chocolate-covered fruit and yogurt bites had their 15 minutes of fame on social media recently,. These delicious bites went viral for good reason… their ease and short, simple ingredients list. All you need are a few staples, you hopefully already have at home! I have been making them ever since they went viral because they are easy, require minimal ingredients and taste like ice cream.

The original trending recipes involve combining strawberries or blueberries with yogurt, freezing the mixture into individual dollops, and then dipping each cluster into a mixture of melted chocolate chips and coconut oil, which solidifies into a hard shell on contact.

I decided to make my own version that is more snickers-flavored! This recipe did not disappoint and was loved by everyone who tried them. Made with nutritious ingredients, this is a healthier dessert recipe that is sure to be a hit with the whole family.

They are dense yet light, crispy, crunchy, chewy, and very addictive. I give them a 1 on work, 10 on reward. I wish all cookie/candy recipes delivered those results. Thick Greek-style yogurt, nut butter, honey and dates make an amazing combination, dense yet light with a melt-in-your mouth quality. I love them. I just knew these bites would be a win.

These yogurt bites are a healthy dessert option as they are made with just a few simple ingredients. The main ingredients –Greek-style yogurt and dates – are both filled with nutritious benefits.

Greek yogurt is an excellent source of: high-quality, complete protein (a 3/4-cup serving has 16 grams) micronutrients like: calcium, potassium, vitamin A, vitamin B12, and gut-friendly probiotic bacteria.

Dates: I love to use dates as a base in most of my snack balls, no-bake bars, or if I need a natural sweetener in a cookie or frosting. They are little morsels of natural sugar and a great alternative to refined sugars. You don’t need many dates to make something sweet!

The dried fruit has a caramel-like sweetness that can also help reduce cravings for sugary snacks. I also added some protein powder too as I find if the treat is not balanced (not enough protein and lots of carbs), it leaves me hungry a couple of hours after but when there is sufficient protein I stay full and happy for longer.

I like keeping a bag of these gorgeous yogurt protein bites in my freezer for when that sweet tooth kicks in. They are super easy to make and so yummy. This recipe is no bake and so wonderfully easy and the perfect addition to any dessert table or  holiday party!

Variations:

There are so many ways to switch this recipe up: You can make these treats all year round, substituting seasonal dried fruits and different nuts for the occasion.

Swap almond or cashew butter for the peanut butter, and add in your favorite chopped fresh fruit! Strawberries, blueberries, mango, and even apples are all great! I’m dreaming of using cherries!

Additional mix-ins: Peanut butter powder, granola, cocoa powder, cacao nibs, sprinkles, dried fruits, and chopped nuts/seeds are all great add-ins!

Chocolate Coating – you can choose different types of chocolate – dark, milk, white, semi-sweet for example.

Peanut Butter Yogurt Protein Bites

These ultra creamy peanut butter yogurt bites taste like little sinful bites of heaven, while being packed with protein! Chewy bits of caramel-like dates are folded into a creamy peanut butter yogurt filling, topped with a chocolate shell and crunchy peanuts. They remind me of a candy bar – you will want this healthy snack on repeat!

Ingredients

  • 1 cup thick Greek-style yogurt, plain or vanilla
  • 1/4 cup peanut (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder
  • 1-2 tablespoons honey or maple syrup (to taste)
  • 1 cup dates, chopped
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 cup peanuts, roasted, chopped
  • Sea salt to sprinkle if desired

Instructions

  • You can make these bites in a 12-hole paper lined muffin pan, a silicon muffin pan or a bar mold. You can even make them in an ice cube tray
    In a medium bowl, combine all of the yogurt bite ingredients, mixing until well combined. Taste and add a little extra honey or vanilla if needed.
    Divide the yogurt mixture amongst your muffin tin, filling each crevice about 1/2 way, leaving the last 1/2for chocolate. I find it easiest to use a tablespoon sized cookie scoop. Place in fridge while you melt the chocolate topping.  

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, add a tablespoon of chocolate to the top of each bite, covering the yogurt. Just divide the chocolate up between the muffin bites.
    Top with some chopped peanuts.
    Place in the freezer for 2-3 hours to allow them to completely firm up. I like to top mine with sea salt once they are firm! Once firm, remove from the muffin tin or mold and store in an air-tight container in the freezer.
