Peanut Butter Yogurt Protein Bites

These ultra creamy peanut butter yogurt bites taste like little sinful bites of heaven, while being packed with protein! Chewy bits of caramel-like dates are folded into a creamy peanut butter yogurt filling, topped with a chocolate shell and crunchy peanuts. They remind me of a candy bar – you will want this healthy snack on repeat!

Ingredients

  • 1 cup thick Greek-style yogurt, plain or vanilla
  • 1/4 cup peanut (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder
  • 1-2 tablespoons honey or maple syrup (to taste)
  • 1 cup dates, chopped
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 cup peanuts, roasted, chopped
  • Sea salt to sprinkle if desired

Instructions

  • You can make these bites in a 12-hole paper lined muffin pan, a silicon muffin pan or a bar mold. You can even make them in an ice cube tray
    In a medium bowl, combine all of the yogurt bite ingredients, mixing until well combined. Taste and add a little extra honey or vanilla if needed.
    Divide the yogurt mixture amongst your muffin tin, filling each crevice about 1/2 way, leaving the last 1/2for chocolate. I find it easiest to use a tablespoon sized cookie scoop. Place in fridge while you melt the chocolate topping.  

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, add a tablespoon of chocolate to the top of each bite, covering the yogurt. Just divide the chocolate up between the muffin bites.
    Top with some chopped peanuts.
    Place in the freezer for 2-3 hours to allow them to completely firm up. I like to top mine with sea salt once they are firm! Once firm, remove from the muffin tin or mold and store in an air-tight container in the freezer.
