Peanut Butter Protein Mousse For One
Ingredients
- 1/4 cup cottage cheese
- 1/4 cup thick Greek-style yogurt
- 1 scoop protein or collagen peptides powder, plain or vanilla
- 2 tablespoon powdered peanut butter or regular peanut butter
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
Toppings Optional
- Fresh fruit or berries
- 2 tablespoons dark chocolate chips
- Whipped coconut cream –recipe below in note
- Freeze dried berries, crumbled
- Chopped nuts
Instructions
- In a blender or food processor, combine cottage cheese, yogurt, protein powder, peanut butter powder, honey and vanilla. Blend on high until the mixture is silky and completely smooth. Taste test and add more honey or vanilla if you think it needs it.Spoon the mousse into a small serving bowl or jar.Chill for 30 minutes if you would like it extra thick and cold.Top with your chosen toppings just before serving.
