This peanut butter protein freezer fudge is silky smooth, and melts on your tongue. It is rich – as fudge should be – but not overly so. It has a nice nutty flavor that is not cloyingly sweet, like traditional fudge recipes tend to be. Just the right balance of sweet-to-creaminess ratio.
I always crave something sweet after dinner and I always have a stash of this fudge in my freezer to satisfy my sweet tooth and stop me over-indulging on something naughty.
Although peanut butter is my favorite base for this recipe (which happens to be packed with minerals including copper, phosphorus, manganese, and zinc), I have also made freezer fudge with sesame butter (tahini), almond and cashew butter, and a mixture of coconut butter and cashew butter.
The result is deeply delicious each and every single time. I also find that I rarely measure ingredients, so if you add in a little more or a little less of the ingredients below – no worries; this recipe is very forgivable.

Peanut Butter Protein Freezer Fudge
Ingredients
- 1 cup peanut (or any other nut or seed) butter
- 1/2 cup coconut oil, melted
- 1/4 cup cocoa powder
- 1/4 cup honey or maple syrup
- 1/4 cup protein or collagen powder - optional
- 1 teaspoon vanilla extract
Topping
- 1/2 cup chopped, roasted, salted peanuts
- Pinch of sea salt
Instructions
- Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Add the peanut butter, coconut oil, honey and cocoa powder to a small saucepan. Heat the pan over low heat and stir the mixture until melty and well combined.Remove pan from heat and stir in the vanilla and protein powder if using.Pour the peanut butter mixture into the lined dish and spread it out evenly. Sprinkle chopped peanuts on top if using or flaky salt.Freeze for 20-30 minutes or until solid. Cut into 16 or more smaller squares to serve.Store in the refrigerator or freezer until ready to serve.
