Peanut Butter Protein Freezer Fudge

This Healthy Fudge tastes like a decadent treat, but it's actually GOOD for you! Made with just SIX ingredients, it's easy to assemble, and there's NO baking required for the final product.

Ingredients

  • 1 cup peanut (or any other nut or seed) butter
  • 1/2 cup coconut oil, melted
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein or collagen powder - optional
  • 1 teaspoon vanilla extract

Topping

  • 1/2 cup chopped, roasted, salted peanuts
  • Pinch of sea salt

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Add the peanut butter, coconut oil, honey and cocoa powder to a small saucepan. Heat the pan over low heat and stir the mixture until melty and well combined.
    Remove pan from heat and stir in the vanilla and protein powder if using.
    Pour the peanut butter mixture into the lined dish and spread it out evenly. Sprinkle chopped peanuts on top if using or flaky salt.
    Freeze for 20-30 minutes or until solid. Cut into 16 or more smaller squares to serve.
    Store in the refrigerator or freezer until ready to serve.
