Peanut Butter Chocolate Protein Bars

These bars are seriously one of my favorite healthier treats to make because they are so freaking easy and do NOT require any baking. They also make an excellent post-workout snack or late afternoon pick-me-up as they happen to pack 9g of protein.

With my busy schedule and the constant struggle to keep my diet healthy, healthy snack bars are what keep me going when I have to skip meals or don’t have time to make breakfast.

These healthy peanut butter bars, made with almond flour, peanut butter and your favorite protein powder topped with a rich chocolate frosting hit just right when it comes to flavor and texture.

Making healthy no-bake protein bars is one of my favorite things to do in the kitchen! Anything chocolatey that I can make a little healthier is a win in my house. I especially like that I can give my family a treat without worrying about added unhealthy ingredients and sugar overload!

Peanut Butter Chocolate Protein Bars

No bake peanut butter chocolate protein bars that taste just like a peanut butter cup. These low carb peanut butter protein bars will be your new favorite snack to keep in your fridge and enjoy all week long!

Ingredients

  • 1 cup peanut butter
  • 1/2 cup almond or coconut flour
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 cup peanut or almond butter
  • Salt flakes -optional

Instructions

  • Line a 7 x 5-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon bar mold.
    In a medium bowl mix together peanut butter, honey, coconut oil, vanilla together until smooth. Add in almond flour and protein powder and mix together until a smooth thick batter forms.
    Scoop out into lined pan and smooth out evenly using a spatula or back of a spoon.
    Place in fridge while you melt the chocolate topping.

Chocolate Topping

  • Place chocolate chips, peanut butter and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted pour over the bottom layer and spread out evenly with a spatula or back of a spoon. Sprinkle with flaky salt if desired, then chill until chocolate has set.
    Once firm and set, remove from pan using the parchment paper handles and cut into 10-12 bars or more smaller squares or pop out of molds.
    Store covered in the fridge until ready to eat. Bars will keep for up to two weeks or place in freezer for up to 3 months.
