This no bake Orange Almond Protein Slice comes together quickly and makes the perfect snack. You only need a handful of ingredients and they take around five minutes to construct making them a really simple recipe to store in the freezer for a quick burst of energy.

This recipe is a ‘healthified’ take on traditional sugar-loaded candy bar or baked slice recipes but made with wholesome ingredients.  As well as being a much healthier version its also much easier to make! You don’t need to add refined white flour, refined white sugar, eggs, butter or oil so its much healthier.

These bars are crunchy, chewy, sweet, and salty all at once, and taste just like a candy bar. So easy to throw together. Simply blend some almonds, add dates, coconut and zesty orange, chill, slice then enjoy! You can also roll the dough into balls if you don’t wish to make them into bar form.

Make this healthy slice recipe even healthier by adding a tablespoon of hemp or chia seeds or ground flaxseed. Every time I make this recipe, it doesn’t last in my house for more than two days. My family just can’t get enough of it!

Ingredients

  • 1 1/2 cups almonds
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/4 cup almond (or any other nut or seed) butter
  • 2 scoops protein or collagen peptides powder
  • 1 orange, juice and zest
  • 1 teaspoon vanilla extract

Topping Optional

  • Crushed almonds
  • Flaky salt

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a food processor, place almonds and process until broken down and crumbly. Add dates, coconut, almond butter, orange juice and zest and vanilla extract continue to process until mixture is well combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your orange almond slice.
    Taste test and add more orange or vanilla if you think it needs it.
    Press the mixture evenly into the lined pan to create an even layer. Top with crushed almonds and flaky salt.
    Refrigerate for at least 2 hours until firm. Slice into 16 squares and serve chilled.
    Store in fridge for up to 1 week or freezer for up to 3 months.
