Orange Almond Protein Slice

No bake Orange Almond Protein Slice bars are perfectly sweetened, are moist, soft and chewy.These are gluten free and paleo. These bars are great to include protein in your family’s diet.

Ingredients

  • 1 1/2 cups almonds
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/4 cup almond (or any other nut or seed) butter
  • 2 scoops protein or collagen peptides powder
  • 1 orange, juice and zest
  • 1 teaspoon vanilla extract

Topping Optional

  • Crushed almonds
  • Flaky salt

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a food processor, place almonds and process until broken down and crumbly. Add dates, coconut, almond butter, orange juice and zest and vanilla extract continue to process until mixture is well combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your orange almond slice.
    Taste test and add more orange or vanilla if you think it needs it.
    Press the mixture evenly into the lined pan to create an even layer. Top with crushed almonds and flaky salt.
    Refrigerate for at least 2 hours until firm. Slice into 16 squares and serve chilled.
    Store in fridge for up to 1 week or freezer for up to 3 months.
