Nut Butter Date Protein Bars With Chocolate Topping
Ingredients
Base Bar
- 1 1/2 cups dates, soaked 30 minutes and drained
- 1 cup rolled oats
- 3/4 cup peanut (or any other nut or seed) butter
- 1/2 cup vanilla or chocolate protein powder
- 1-2 tablespoons milk of choice (as needed)
- 1/2 teaspoon vanilla extract
- Pinch sea salt
Chocolate Topping
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Add dates, oats, peanut butter, protein powder, vanilla extract and sea salt to a processor and blend until they form a sticky paste.If the mixture is too thick or crumbly, add milk one tablespoon at a time until it holds together when pressed between your fingers.Scoop the mixture firmly out into the lined pan and smooth out evenly with a spatula or back of a spoon.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, pour over the base and spread evenly. Sprinkle with sea salt if desired. Refrigerate for at least 1–2 hours, or until fully set.Slice into 10-12 bars and enjoy.Store bars in the fridge for up to 1 week or freezer for up to 3 months.
