No baking is required here, just need to put them in the freezer to set. They can also be kept in the freezer the whole time which is actually a good thing, as these could easily tempt you to eat them all. 😊

My Healthy Millionaire Protein Bites
Ingredients
Bottom Crust Layer
- 3/4 cup almonds or walnuts
- 1/3 cup peanut (or any other nut or seed) butter
- 1 scoop protein or collagen peptides powder
- 2 tablespoons coconut oil, melted
- 2 tablespoons honey or maple syrup
Middle Layer
- 6 Medjool dates
Chocolate Topping
- 3/4 cup chocolate chips
- 2 teaspoon coconut oil
Instructions
Bottom Crust Layer
- Add almonds to a food processor and process until broken down and crumbly. Add peanut butter, honey, coconut oil and protein powder and continue to process until mixture forms into a sticky dough. If mixture seems too thick add a little milk or water a tablespoon at a time until dough comes together.Scoop out evenly into a 6-hole candy mold or an ice cube tray.You will get more in the ice cube tray as the cavities may be smaller. Or you can use paper liners in a muffin pan. It does not matter what size these are, they will still be delicious.
Middle Layer
- Open up a date, remove pit and flatten out a bit. Place one date on top of the bottom crust layer in each cavity.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Fill the molds to the top with chocolate then place in the fridge to setStore in the fridge or freezer, I love them from frozen!
