This Mint Chocolate Chip Nice Cream is gluten free, high protein and low sugar. Using only six ingredients, all you have to do is blend, and freeze. You will have the creamiest, sweet, minty ice cream in no time!

Ingredients

  • 3 bananas
  • 1 cup cottage cheese
  • 1 avocado, deseeded, peeled
  • 1/2 cup coconut milk, full fat
  • 1/2 teaspoon peppermint extract
  • 1/2 cup chocolate chips
  • Few drops natural green food colour or make your own – cook tender, greens (such as spinach) in a tiny bit of water for about a minute. A few drops of the juice will give a very concentrated green

Instructions

  • Place all ingredients except chocolate chips in a food processor and process until smooth and creamy. Taste test and add more peppermint extract or more honey if you think it needs it.
    Pour into a medium-sized glass food container.
    Add chocolate chips and stir to evenly distribute.
    Place in freezer for at least 2 hours, stirring halfway through to prevent iciness.
    Once set, scoop, and enjoy!
