Zesty Lime Coconut Bars
No one will believe you when you tell them these zesty lime coconut bars are healthy. They are quick and easy to make and require very basic, minimal ingredients. Made with a delicious creamy cashew filling, a crunchy crust and bursting with tons of lime flavour they are seriously addictive and are the perfect healthy treat.
Ingredients
Base
- 1 cup almonds
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup desiccated coconut
- 1 teaspoon vanilla extract
Filling
- 2 cups cashews
- 1/2 cup coconut milk or cream (full fat)
- 1/4-1/2 cup lime juice
- 1 tablespoon lime zest
- 2-3 tablespoons honey or maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
Instructions
Base
- Soak the cashews in water for a few hours (or overnight) for the filling. Add the base ingredients to a food processor and pulse until a sticky dough forms. Press the dough into an 8×8 baking pan lined with parchment paper. Put the crust in the fridge or freezer while you prepare the lime filling.
Filling
- Add the soaked cashews, lime juice, lime zest, honey, coconut oil, coconut milk, and vanilla extract to your food processor and blend the filling until silky smooth and creamy.Give the filling a taste and adjust the level of sweetness or tartness to your taste. You can add more honey or add more lime juice to suit your taste buds.Pour the key lime filling over the prepared crust. Freeze the bars overnight or until completely solid.To serve, remove the bars from the freezer and use a sharp knife to slice the bars into 9 or more pieces. Serve semi thawed with finely grated lime zest to finish.
