Lime Avocado Popsicles With Magic Shell
These Lime Avocado Popsicles are easy to make, refreshing, nutritious and super creamy! They are made with ripe avocadoes, so ‘good for you’ coconut milk, and zesty lime. These pops are probably one of the quickest ice-creams you can make – it’s just a case of blend and freeze.If you don’t have ice-lolly molds, just freeze the mixture in a lidded plastic container and serve as ice-cream.Creamy yet zingy and delicious pops, easy-to-make dessert or perfect afternoon or after dinner snack. Dip them in melted chocolate for a ‘magic shell’ and top with crushed nuts or your favourite toppings for some decadence.A thick pour of magic shell over ice cream is simultaneously creamy and crackly, both smooth and shattery. But the real mind-blowing thing about it? It's a snap to make.What causes magic shell to harden? Coconut oil! Coconut oil is solid at room temperature but when you warm it, it turns into a liquid. To make the sauce,you melt coconut oil with chocolate. Once the sauce comes into contact with the cold ice-cream, the coconut oil reverts back to it's solid state, creating the hard shell...it's magic!The best thing about this sauce is that it takes less than 5 minutes to make. Break up your chocolate (or use chocolate chips). I've made it with dark chocolate, milk chocolate and chocolate chips. All are great so choose whichever chocolate you like to eat the most, or whatever you have handy. The magic shell coating takes ice cream or in this case popsicles to a whole new level.

Ingredients
- 2 avocados ripe, peeled and pitted
- 1 13.5 oz can coconut cream, full fat
- 2-3 tablespoons honey or maple syrup
- 1-2 limes, juice and zest (depending on how lime-y you like it)
- 1 teaspoon vanilla extract
Magic Shell Chocolate Topping
- 1 1/2 cups chocolate chips or bar chopped
- 1 1/2 tablespoons coconut oil
- 10 Popsicle sticks
Instructions
- In a food processor, puree avocado, coconut cream, honey, lime juice, zest and vanilla. Process until well combined, smooth and creamy. Taste test and add more honey or lime if you think it needs it.Pour mixture into 8-10 popsicle molds (depending on the size) until almost full. Insert wooden sticks and place in freezer for at least 3 hours, or until the popsicles are solid. If you do not have popsicle molds, simply place in a lidded plastic container and serve as ice-cream.
Magic Shell Chocolate Coating
- Place chocolate chips and coconut oil in small deep jug or mug (so you can dip the popsicles in easily) and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth. It usually takes around 1½ minutes to melt the chocolate depending on the microwave.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the popsicles from freezer and unmold them after checking they are firm and set. Dip into the melted chocolate. Dip twice if preferred then roll in chopped nuts, toasted coconut, sprinkles or your favourite toppings and/or drizzle with more melted chocolate.Enjoy immediately, or store in the freezer until ready to serve.
