I’ve always been a fan of lemony desserts and snacks. These lemon coconut protein snack balls are my absolute favorite snack to prep for the week.

Whether you choose to call them bliss balls, protein balls, energy balls, energy bites, or whatever else, they are still delicious. Little spheres of snacking. Little orbs of awesomeness.

Snack balls can be made of a lot of things, such as oats, dates and nuts, but this recipe features lemon, coconut, cashews, honey and some protein powder. All you need is a handful of simple, pantry staple ingredients and a few minutes to prep since they are no bake! Lemon Protein Snack Balls With Coconut Drizzle

Sweet yet tangy and so easy to make, these lemon snack balls are a simple and nutritious treat designed to get you through a busy day. Made with just 7 ingredients they have 8grams of protein per serving.

Ingredients

  • 1 cup cashews, soaked 3+hours and drained
  • 1 1/2 cups desiccated coconut
  • 1/4 cup protein or collagen powder
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons hemp seeds
  • 1-2 lemons, juice and zest – depending on how lemon-y you prefer
  • 1 teaspoon vanilla extract

Toppings Optional

  • 1/4 cup coconut butter melted, store bought or recipe below in notes
  • Zest of 1 additional lemon
  • 1 teaspoon poppy seeds
  • Desiccated coconut to roll balls in

Instructions

  • Add all ingredients to a food processor and process until well combined and mostly smooth. Be careful not to over process as its nice to have texture variance and different sized “bits” in your snack balls.
    Taste test and add more honey, lemon or vanilla if you think it needs it.
    Scoop out 1 tablespoon lots of dough and roll into about 1 inch balls. Makes 12-16 depending on what size you prefer.
    Place coconut butter in small dish and microwave at  50% power with 20 second bursts stirring between each one until melted.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the coconut butter.
    Drizzle with melted coconut butter and sprinkle zest/and or poppy seeds over each snack ball. Refrigerate until coconut butter hardens.
    Or roll into shredded coconut if desired.
    Place in the fridge to set for about 30 minutes.
    To store, in fridge for 1 week or freezer for up to 3 months.
