Ingredients

  • 1 cup thick Greek-style yoghurt or coconut yoghurt
  • 2 scoops vanilla protein powder
  • 2-3 tablespoons honey or maple syrup (to taste)
  • Zest and juice of 1 lemon
  • 1 teaspoon vanilla extract

  • Fresh pineapple pieces
  • Toasted coconut

  • Crushed nuts

Instructions

  • Add frozen pineapple, lemon zest, lemon juice, yoghurt, protein powder, honey and vanilla to a high-speed blender.
    Blend until completelysmooth and creamy, scraping down the sides as needed.
    Taste and adjust sweetness or lemon to suit your preference.
    Pour the mixture into a freezer-safe container and smooth the top.
    Freeze for 3–4 hours, stirring once or twice during freezing for a creamier texture.
    Remove from freezer 5–10 minutes before serving to soften slightly.
