Add frozen pineapple, lemon zest, lemon juice, yoghurt, protein powder, honey and vanilla to a high-speed blender.Blend until completelysmooth and creamy, scraping down the sides as needed.Taste and adjust sweetness or lemon to suit your preference.Pour the mixture into a freezer-safe container and smooth the top.Freeze for 3–4 hours, stirring once or twice during freezing for a creamier texture.Remove from freezer 5–10 minutes before serving to soften slightly.Scoop, add toppings if desired, and enjoy.
