Lemon Coconut Mousse

Ingredients
- 1 13.5 oz can, full fat coconut cream or milk, chilled
- 1-2 tablespoons honey or maple syrup
- 1-2 lemons juice and zest, depending on how lemon-ey you prefer
Instructions
- Either refrigerate the coconut cream/milk can overnight, or open and freeze about 10 minutes. (I store a can in the fridge so there is always one ready to go). Be sure to use full-fat canned coconut cream/milk for this recipe. Try not to shake the can, because you want the cream separate from the water underneath.)
- Remove the lid from the chilled can then carefully scoop out the solid bit, the hardened coconut that has risen to the top, leaving the coconut “water” in the bottom of the can. You can add the left over coconut water to a smoothie, drink it or discard it.Using either a stand mixer or hand beaters, whip the cream until smooth and it has formed a mousse-like texture. Whip in the honey, lemon juice and zest, taste and adjust sweetness or flavour if needed.Be careful not to overmix, as it could heat the cream and cause it to turn to butter!
