Lemon Blueberry Protein Bites
Ingredients
- 1 cup cottage cheese
- 1/2 cup almond flour
- 1/4 cup protein or collagen peptides powder
- 1-2 lemons, juice and zest (depending on how lemon-y you prefer)
- 2 tablespoons honey or maple syrup
- 1 cup dried blueberries
Instructions
- Blend the cottage cheese in a food processor until smooth and creamy.Add almond flour, lemon zest, lemon juice, and honey. Blend again until a thick dough forms.Stir in the dried blueberries with a spoon or spatula to keep them whole.Taste test and add more honey, lemon or vanilla if you think its needed.Scoop and roll into small bites, about 10-12 depending on your preferred size. Place on a plate and refrigerate for at least 30 minutes before serving. Store in the fridge for up to 1 week or freezer for up to 3 months.
