1cupcottage cheese
1/2cupalmond flour
1/4cupprotein or collagen peptides powder
1-2lemons, juice and zest (depending on how lemon-y you prefer)
2tablespoonshoney or maple syrup
1cupdried blueberries
Instructions
Blend the cottage cheese in a food processor until smooth and creamy.Add almond flour, lemon zest, lemon juice, and honey. Blend again until a thick dough forms.Stir in the dried blueberries with a spoon or spatula to keep them whole.Taste test and add more honey, lemon or vanilla if you think its needed.Scoop and roll into small bites, about 10-12 depending on your preferred size. Place on a plate and refrigerate for at least 30 minutes before serving. Store in the fridge for up to 1 week or freezer for up to 3 months.
