Iced Oatmeal Cookies get a healthy makeover! They are chewy and sweet, don’t require any cooking or baking as there is no raw eggs or flour in them.  This is the new way of “unbaking”, healthier, quicker and easier.

As well as being really easy to make, these cookies are healthier than your average treat as they are made with wholesome REAL food ingredients. With the added protein powder it makes them more balanced than the traditional high carb recipe.

Old fashioned baked recipes always had tons of sugar, carbs and fats making them really unbalanced nutritionally. The new modern way is to add protein making the macros ratios (protein, carbs, fats) more in balance and healthy.

Sometimes you just want a simple snack or dessert and when those cravings strike, reach for this fabulous cookies recipe. These treats are a bit like fudge in consistency, perfectly sweet, richly almond buttery and balanced with warm hints of vanilla.

I know! Just when you thought there was no way to improve on a classic oatmeal cookie here is the recipe. These cookies are the stuff of dreams. They come together very quickly and satisfy the cookie and quick snack craving!

This recipe is so easy that even your kiddos can make them. All you do is mix the ingredients together, add them to a baking sheet and let them firm up. It all starts with some almond butter and flour, which just needs to be stirred together with some oats, coconut, honey and vanilla and you are done!

When I’m in a super time crunch (okay, basically all the time), I cannot stand even the thought of making all my snacks from scratch. Then, I have a long talk with myself about how important it is to practice what I, erm, publish, and head into the kitchen to make All the Things.

These make the perfect snack or dessert when you need something that’s on the healthier side fast. I could see these making great gifts. Or make in a large batch and keep them in the freezer so there’s always a healthier treat on hand!

 

Iced Almond Oatmeal Protein Cookies

This no bake cookies recipe may be the easiest healthy treat ever. Made in just 5 minutes, these easy iced almond oatmeal protein cookies are perfect for desserts, breakfasts and post-workout snacks!

Ingredients

  • 1 cup almond flour
  • 1/2 cup oats, instant or quick
  • 1/2 cup almond butter
  • 1/4 cup desiccated coconut
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein or collagen peptides powder
  • 1/4 teaspoon cinnamon - to taste
  • 1 teaspoon vanilla extract

Cashew Icing

  • 3 teaspoons cashew or almond butter
  • 3 teaspoons coconut oil
  • 2 teaspoons honey or maple syrup

Topping

  • Coconut shreds

Instructions

  • Mix together all ingredients in a medium mixing bowl. Taste and adjust if needed with more honey, vanilla or cinnamon.
    Note: If mixture is too wet, add a little extra almond flour until you get a cookie dough consistency. Or if the mixture is too dry, add a water or milk, a tablespoon at a time until mixture comes together.
    Use a cookie scoop to drop 10 dough balls on a large plate or baking sheet lined with parchment. Flatten with a flat measuring cup.
    Freeze cookies until hardened (30-60 minutes).

Cashew Icing

  • Stir together all ingredients in a small bowl. Melt gently if your oil is too firm.
    Spread around ½ teaspoon icing onto each cookie.
    When the icing starts to firm up, garnish with coconut shreds for "sprinkles."
    Chill cookies to harden icing completely.
    Store in fridge for up to 1 week or freezer for up to3 months.
