Ice Cube Date Chocolate Protein Bites

Healthy homemade chocolate date protein bites are an easy no-bake treat made with just 6 ingredients. Like the viral date bark all over social media sites at the moment which is just dates, peanut butter and chocolate, these bite-sized date snacks are another version and are high in protein and fiber.

Ingredients

  • 4 dates
  • 1/4 cup peanut butter
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • Soak the dates in a bowl or pot of just boiled water for 2 minutes then drain and cut each one in half.
    Place chocolate chips and coconut oil in medium dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted stir in the protein powder and vanilla extract until well combined.
    Dollop a teaspoon of the melted chocolate/protein mixture into each well of your ice cube tray.
    Insert a half a date into each ice cube tray well on top of the chocolate layer.
    Spoon a teaspoon of peanut butter on each date half and spread it out.
    Add a teaspoon of melted chocolate on top of each ice cube tray well.
    Freeze filled trays for 30 minutes or until you can remove them from the ice cube trays.
    Store in fridge for up to 2 weeks or in freezer for up to 3 months.
