Healthy Ginger Energy Balls

Have you jumped on the energy bite/protein ball craze? The ones made with dates/nuts/seeds/oats/other healthy goodness? I have been making these healthy treats for years and never get tired of them.
So, if you have been looking for an easy, nutritious homemade protein/energy bite then this is the ultimate one! This no-bake recipe is so easy to put together. Adjustable, delicious, these energy balls are the best for a post-workout snack or start to a busy day!
Loaded with chunks of cashews, almonds, dates, coconut and chunks of ginger - all natural ingredients rich in vitamins and minerals to keep you full and energized throughout your day.
Whoever is responsible for the idea that we should mash a bunch of healthy ingredients into one little ball as a snack is an absolute genius in my book.

After all, who doesn’t love a good protein/energy ball or bar? They are among the most tasty, filling,and convenient healthy snack ideas you can enjoy. If you are looking to make homemade energy balls, though, then you have probably got an inkling that DIY’ing it has certain advantages.
The main draw with going the homemade route is the infinite customizability. When you make your own healthy treats, you never have to compromise on getting exactly what you are looking for. You can also save money by making your own healthy homemade bars and they can taste way better than anything you can buy at the store.
These are the perfect healthy snack to fuel your day. I loveee ginger and ginger-flavored everything. And these taste really gingery, but in a chewy, healthy energy bite! Even better.
No baking necessary here. All the work is done in your blender or food processor. Throw everything in then blend it up until it comes together in a sticky ball. We then roll that sticky dough into balls and if you would like, drizzle them with chocolate.
They can be made start to finish in 15 minutes. Maybe 10 if you are quick or skip the chocolate drizzle.
The chocolate drizzle just made them look a lot prettier than the round, brown balls they looked like pre-drizzle. But you can opt for or against the chocolate drizzle.
I love having my freezer stocked with energy balls like these ones for pre-workout snacks or whenever I just want a ‘lil somethin’.

Ingredients

  • 3/4 cup almonds
  • 3/4 cup cashews
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/2 cup crystallised ginger, chopped, or a 1 inch piece fresh ginger finely chopped or 1 tbsp ground ginger
  • 1/4 cup coconut oil, melted
  • 2 tablespoons cocoa or cacao powder
  • 1/2 teaspoon vanilla extract

Chocolate Drizzle - optional

  • 1/2 cup chocolate chips
  • 1 teaspoons coconut oil

Instructions

  • Place cashews, almonds and coconut into a food processor and process until broken down and crumbly.
    Add dates and coconut oil, and continue to process until a sticky dough has formed. Be careful not to over process as its nice to have texture variance and different sized “bits” in your energy balls.
    Lastly add chopped ginger and pulse a few times until mixed through. Taste test and check there is enough of a ginger taste for you.
    Make 8-10 tablespoon sized balls (or your preferred size) and place on a tray or plate while you melt the chocolate drizzle.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Place the melted chocolate into a zip bag or piping bag, snip the corner and drizzle over the energy balls. Or use a spoon to drizzle it.
    Place in fridge to firm up and set.
    Keep stored in a sealed container in the refrigerator or freezer.
