I love making raw desserts and snacks because they are so beneficial to our overall health! Instead of making us pack on the pounds, they can actually do the opposite and help us get healthier so we can lose weight and get into better shape!
Its true that most of us have a sweet tooth and healthy raw desserts and treats are amazing at taking away cravings without refined sugar.
Most raw desserts are gluten-free, dairy-free, and refined-sugar-free! This nutritious dessert recipe is not only dairy-free, it’s also naturally egg-free and soy-free too!
How can you beat that to replace a processed dessert or dessert that’s full of sugar? If you are a fan of coconutty macaroons, trust me, you will love these bad boys.
In a society obsessed with diet culture, we are often taught to fear cravings and view them as a sign of weakness. But what if I told you that honoring these cravings could actually improve your relationship with food and enhance your overall well-being?

This recipe is a fast and satisfying snack that tastes like a decadent dessert. Each bite bursts with a symphony of textures: soft and creamy filling melts in your mouth, perfectly complemented by the tanginess of the berries and lemon flavour. Ingredients

  • 2 cups desiccated coconut
  • 2 cups fresh or 1 cup freeze dried strawberries
  • 1/4 cup coconut oil, melted
  • 3 tablespoons honey or maple syrup
  • 1 lemon, juice and zest
  • 1 teaspoon vanilla extract

Instructions

  • Place the coconut into a food processor and process until broken down and creamy. This can take 2-3 minutes, sometimes a bit longer. I gently warm the coconut a little in the microwave first and this shortens the time it takes to become creamy and buttery like.
    Add the strawberries, coconut oil, honey and vanilla and process until well combined. Depending on how textured you like it, as long as the ingredients are well incorporated, and mixture will press together well.
    Drop the batter, about a tablespoon worth onto a lined cookie sheet to make 16-20 cookies or to your preferred size.
    Place in the fridge or freezer to harden for 10-20 minutes.
    Store in an airtight container in the fridge or freezer. If frozen let thaw a little before eating.
