But the high amounts of butter, the truckloads of sugar, dairy, eggs, sugar laden condensed milk used in traditional recipes for this citrus-infused treat does not play along nicely with a healthy eating plan. Good thing that my favourite thing to do is take an old fashioned ‘not-so-healthy’ recipe and healthify it – turning it into a healthier alternative.

But these bars are truly a minimum fuss dessert. And for how easy it is to make, the flavour and richness are wild. So, SO good. I have mine stored in the freezer and set some out to thaw a bit while we are cleaning up after dinner. Perfect sweet relief at the end of a busy day.

I love a good yummy something and it’s become a tradition that I make something for the weekend, almost every weekend. It’s just a nice way to reward yourself I think, and keep the sugar-intake at a minimum. But, but wait! What if this said lemon nice cream dessert is incredibly um… Good-for-you! Like for reals! No sugar added, healthy ingredients, amazing taste, completely guilt-free!? Do all my rules and all my discipline for craving sugar go out the window? Ha! They kind of do!!! 😉

Because this lemon ice cream is so crazy amazing you can feel good about eating it, even for breakfast and not feel one piece of guilt about it! 😉 Just trust me on this… this is a no-bake, raw recipe for a dessert so delicious I think you should just make a double batch and call it a day!

Tips for Making Lemon Protein Ice Cream

Use full-fat coconut cream or milk. The success of this recipe definitely lies in the full-fat coconut milk. Anything “light” isn’t going to give you the full-bodied texture and fat that’s required for this churn-less delicacy.

Get creative with your citrus. If I were to make this again, I’d probably mix a lime in there, maybe an orange, and a handful of frozen berries. Worth a try anyway.

Remember to let it thaw. If you plan to freeze it and eat it at a later date, don’t forget to let it thaw on your counter for at least 15 minutes before you try digging in. Your wrist and your spoons will thank you.

Ingredients

  • 1 cup coconut cream or milk
  • 1/2 cup cottage cheese
  • 1/2 cup thick Greek-style yogurt
  • 1/4 cup protein or collagen peptides powder
  • 1-2 lemons, juice and zest depending on how lemon-y you prefer
  • 2-4 tablespoons honey or maple syrup (taste test)

Instructions

  • Add all ingredients to a high speed blender and blend until smooth.
    Either eat immediately as soft serve or transfer to a dish and freeze for at least 4 hours or overnight.
    Note that cottage cheese ice cream can become very firm in the freezer, so if it's frozen for too long, let it thaw on the counter for 15-20 minutes before serving.
    Scoop into bowls, garnish with lemon zest if desired to serve.
