One treat I remember back in the 80’s and 90’s was The Klondike Bar! I used to adore those foil-wrapped ice cream bars. The silky white cream, covered in a thin shell of crispy dark chocolate, all melty and amazing. I think we actually always had them in our freezer, back in the day. Is that normal? Looking back…. Probably not.

So it was on the list of recipes to ‘healthify’ – made healthier. So to ‘healthify’ this treat via an easy recipe I did a few tweaks and, well, upgrades to the original concept bar. So. Here they are. Klondike Bars. Healthified. And kinda even more amazing than ever. If you ask me. Hands down my new favorite ice cream bar.

Gorgeous creamy ice cream bars dipped in chocolate and almonds, ideal for birthday parties or an any time healthy snack or dessert. We are all familiar with ice cream bars – a popular store-bought confectionary of ice cream molded in popsicle form, in many various flavours, coated with chocolate.

Store bought ice creams, as tasty as they are, most of the time are NOT healthy. Unfortunately. So, guess what?! We are making them ourselves and making a healthier version.

Two of my favorite things…ice cream and chocolate! So fun! And so yummy, too!  So here I have a recipe for you for delicious ice cream bars packed with protein, fiber, healthy fats, wholefoods and topped with melted chocolate and chopped almonds.

The last time I bought a store bought ice cream I was looking forward to eating it after dinner at ice cream time! Unfortunately, it was pretty disappointing. It was overly sweet and all I could taste was sugar. So I took matters into my own hands and made a much healthier, refined sugar-free version, which I think is way more delicious!

Next time you buy ice cream bars at the super market you can check the ingredients. You will be surprised by how many ingredients are used. Besides lots of chemicals and flavour extracts (or natural flavours!!) Yeah right! You will find a ton of sugar in them. This quickly loads up to about 20 g of sugar per ice cream. And all of this in one single ice cream! Of course, not every single ice cream has this nutritional value, but there are simple and easy ways to choose a healthier ice cream, simply make it yourself.

Ingredients Original Klondike Bar:

Nonfat Milk, Sugar, Coconut Oil, Corn Syrup, Cream, Corn Syrup Solids, Whey, Chocolate Liquor Processed With Alkali, Milk, Soybean Oil, Cocoa Processed with Alkali, Mono And Diglycerides, Locust Bean Gum, Guar Gum, Natural And Artificial Flavor, Soy Lecithin, Carrageenan, Salt, Caramel Color, Vitamin A Palmitate

Ingredients ‘Healthified’ Klondike Bar:

Cashews, Coconut Cream, Dates, Cashew Butter, Chocolate Chips, Coconut oil

You can see the difference in the number of ingredients and their quality.

The original Klondike Ice Cream Bar has been labelled one of the unhealthiest. Its small, just 5.5 oz, but it comes with a mighty load of sugar – 23 grams to be exact, plus 14 grams of fat with 11 g saturated!

My copycat Klondike bars are made with a creamy cashew butter, coconut ice cream base, dipped in chocolate, and sprinkled with chopped almonds. A much better-for-you version of the notorious original treat but with a nut butter twist.

And…who doesn’t love a good copycat recipe? Bonus points when it’s gluten free, refined sugar free, and pretty simple to whip up! Crafted with wholesome ingredients like cashews, coconut cream, dates, and cashew butter, this new homemade ice cream bar recipe provides a rich source of gut-loving fiber and skin-nourishing nutrients.

Ice cream is my favorite dessert! No doubt about it. And making healthier homemade ice cream allows you to experiment and include just the ingredients and tastes that you like and prefer.

These ice cream bars are really easy and quick to make, it you don’t count the freeze time. You have a crunchy chocolate cover over a super healthy, creamy, vanilla ice cream. You can of course adapt the taste of the vanilla ice cream and make it chocolate, salted caramel or your favorite fruit flavor.

These bars are perfect to serve for a delicious afternoon snack or dessert. They are rich, creamy, and not overly sweet, making them even more delicious (and way healthier) than the original.

Healthier Klondike Ice Cream Bars

Ice Cream Bars are made with a creamy cashew filling, and coated in a 3-ingredient chocolate shell. Naturally-sweet and dairy-free!

Ingredients

  • 1/2 cup cashews, soaked 3+hours and drained
  • 1 13.5 oz can coconut cream or milk
  • 4-5 dates, soaked in hot water for 10 minutes, drain
  • 2 tablespoons cashew (or any other nut or seed) butter
  • 1/3 cup chocolate chips

Chocolate Coating 

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 cup chopped nuts (I used almonds)

Instructions

  • In a blender add cashews, coconut cream, dates, cashew butter and process until smooth. Fold in the 1/3 cup chocolate chips and pour into your preferred ice cream mold. Makes 6-8 bars depending on size.
    Freeze for 3-4 hours. Melt the chocolate coating.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Add the chopped nuts and stir until well combined.
    Remove the bars and after checking they are firm and set, cut into 6-8 bars or pop out of molds.
    Once melted use two forks to hold each bar and one by one, dip into the melted chocolate, then place back on the parchment lined tray.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Sprinkle with flaky salt if desired, then chill until chocolate has set.
    Store in freezer.
