Healthier Klondike Ice Cream Bars

Ice Cream Bars are made with a creamy cashew filling, and coated in a 3-ingredient chocolate shell. Naturally-sweet and dairy-free!

Ingredients

  • 1/2 cup cashews, soaked 3+hours and drained
  • 1 13.5 oz can coconut cream or milk
  • 4-5 dates, soaked in hot water for 10 minutes, drain
  • 2 tablespoons cashew (or any other nut or seed) butter
  • 1/3 cup chocolate chips

Chocolate Coating 

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 cup chopped nuts (I used almonds)

Instructions

  • In a blender add cashews, coconut cream, dates, cashew butter and process until smooth. Fold in the 1/3 cup chocolate chips and pour into your preferred ice cream mold. Makes 6-8 bars depending on size.
    Freeze for 3-4 hours. Melt the chocolate coating.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Add the chopped nuts and stir until well combined.
    Remove the bars and after checking they are firm and set, cut into 6-8 bars or pop out of molds.
    Once melted use two forks to hold each bar and one by one, dip into the melted chocolate, then place back on the parchment lined tray.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Sprinkle with flaky salt if desired, then chill until chocolate has set.
    Store in freezer.
