Healthier Cranberry Pecan Candy
Ingredients
- 1 1/2 cups white chocolate chips
- 1 tablespoon coconut oil
- 1 1/2 cups dried cranberries
- 1 1/2 cups chopped pecans
- 1 teaspoon vanilla extract
Instructions
- Line a 7 x 5-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the candy out easier for cutting into squares.Or you can simply drop tablespoons of the mixture onto a parchment lined tray.Either way is good. Its up to you whichever way you prefer.Place chocolate chips and coconut oil in medium sized bowl or dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, stir in the dried cranberries and chopped pecans until evenly combined.Scoop mixture out into the lined pan or drop by tablespoonfuls onto a sheet of parchment paper.Place in fridge to allow the candy to cool and set. Cut into 10 or more smaller squares if you have used a baking pan.Store in fridge for up to 1 week or freezer for up to 3 months.
