Ingredients

  • 1 cup blueberries (fresh or frozen)
  • 3/4 cup coconut milk or cream (full-fat for creaminess)
  • 2 tablespoons collagen peptides or unflavoured protein powder
  • 2 tablespoons gelatin powder
  • 2-3 tablespoons maple syrup or honey (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • Optional: 1 teaspoon lemon juice for brightness

Instructions

  • Plant-based option: Replace gelatin with agar agar powder (follow packet instructions for setting).
    Add blue berries, coconut milk, maple syrup, vanilla extract and lemon juice (if using) to a blender. Blend until smooth.
    Pour the mixture into a small saucepan and heat on low until warm but not boiling. This helps activate the gelatin without damaging the ingredients.
    Remove from heat and sprinkle gelatin slowly over the warm mixture while whisking continuously to prevent clumping. Stir in collagen peptides or protein powder until fully dissolved.
    Pour into 12 silicone gummy moulds or a small lined dish if you prefer to slice into cubes later.
    Place in the fridge for 2–3 hours, or until fully firm.
    Pop the gummies out of the moulds and store in an airtight container in the fridge for up to 5 days.
